Simple Coconut Macaroons or cookies - a quick snack for a lazy evening

Hello people, I am back with another post of mine which is a very simple snack to quench your sudden sweet cravings or to entertain your surprising visitors when your pantry is completely empty. This sweet snack is rich & delicious and I happened to taste it for the first time when a friend of mine made it for an outdoor picnic. I was really thrown back when she said me the ingredients that was needed for the recipe and I knew for sure that I will be giving it a try. Quite enough, I was not disappointed with the outcome.





Ingredients:


For Macaroons:

1. Shredded coconut - 1 cup

2. Condensed milk - 1/3 cup

3. Vanilla essence - a dash


For Chocolate drizzle:

1. Dark chocolate - 15 gm

2. butter - 1 tbsp

3. milk - 2 tbsp


Instructions:


For Macaroons:

1. Take a mixing bowl and pour in the vanilla, condensed milk and the shredded coconut. Mix it thoroughly but at the same time keep it airy using a fork. But if you are not comfortable, Its good to clean your hands well before getting into this messy business.



2. Use a table spoon to scoop out the mixture and shape it into an inch sized balls by placing it on the baking tray. Its important to not overcrowd them here and leave one inch of space between each macaroon. These might remind you of Raffaello balls and they taste equally yummy.



3. I used aluminium foil to line my tray here but you can use the parchment paper as well, whichever you find handy at home.

4. Now place the baking tray in a preheated oven of 200 degree Celsius for 10 minutes.

5. It is always important to have an eye on the oven before the destined time because no one likes burnt food. Take out your baked macaroons, transfer to the serving plate and leave it to cool for a little while when you get your chocolate drizzle ready.




For Chocolate drizzle:


1. Take a microwave bowl and put in the dark chocolate which you have to microwave for 45 seconds.



2. Take the bowl and give it a stir by adding in the butter and milk together.



3. Again microwave the mixture for 20 seconds this time and mix thoroughly.




4. Scoop it in a spoon and drizzle it over the macaroons. And yes, my little one wouldn't wait for me to snap a picture and she quite enjoyed her treat.



Wasn't that the easiest rich snack to make and share with your loved ones.
